Giardino Gourmet Salads was conceptualized by husband and wife team Kenny and Ody Lugo, formally a firefighter and Miami-Dade County school teacher. As a teacher, Ody made sure that her students knew where food really came from.

Her commitment to teaching her students about nutrition and health inspired her to create the concept of a ‘Healthy Fast Food’ restaurant. With no restaurant experience they risked everything for a dream. The Lugo’s are dedicated to bringing healthy, convenient and affordable eating options to South Florida with amazing customer service.

Their commitment of service also extends to the community in participation with charity events and fundraisers. Kenny believes that by giving to the community it will always remind you of where you came from. A little history....

In Brazil we call GRIMPA the branches of a special type of pine tree, tha "Araucária", very common in the southern region. The "Gauchos" that live in this region traditionally used these dry branches to start their campfires and prepare the "CHURRASCO" while they were out in the "Pampas" with their cattle. Naturally, meat was the main component of these meals.

These Araucárias also have an interesting mythical story. A famous tale from southern Brazil tells the story of a big blue bird whose favorite food was the Araucária nut, every fall this bird would bury the extra pine nuts to eat later that winter. But many of these nuts were forgotten buried and grew up to become these incredible and tall trees.

The Gauchos of southern brazil are also the inspiration for GRIMPAS's style of service, the "Rodizio". This charming, moderately priced trattorialike pizzeria is a 40-seat (with 30 more chairs outside) spinoff of Trattoria Sole next door. A main benefit from that association is the wine selection, which is far more extensive than one could reasonably expect to find in a pizza place. Panini, focaccia, and half-moon calzone constitute some of the offerings for pizza-poopers, but it's the pies that bring Blú the green.

The blissfully blistering treatment they undergo while baking rapidly in a smoldering hot, wood-burning oven yields a crisp, semicharred crust with thin, bready middle and seared topping of bubbling cheese and tomato sauce. Delicious, and 28 variations from which to choose: spinach/fontina, eggplant/Parmesan, artichoke/mushroom, and anchovies with oregano, a staple in Naples and Rome.

There also are more than a dozen sauceless pizza bianche, which include "tartufon" with mozzarella, mushrooms, and white truffle oil; and "pizza blú," covered in mozzarella, fontina, eggplant, potatoes, and fresh rosemary. The priciest pizza costs $13.50, the average is around $10, but none is more rewarding than the basic fiore di campo of tomato, mozzarella, and basil that's yours to eat in or take out for $7.50.
